What jetting does that a cable cannot
A drain cable, the tool most clogs get cleared with, is a spinning line that punches a hole through a blockage. That restores flow, and for a lot of clogs it is exactly enough. What a cable does not do is clean the pipe. It leaves the grease coating on the walls and it cuts through a root mass without removing it, so the line clogs again from the same spot. Hydro jetting is the difference: a high-pressure hose with a specialized nozzle that scours the full inner wall of the pipe with water, stripping grease build-up back to bare pipe and cutting roots out rather than around. When a line keeps re-clogging, jetting is usually what actually ends it.

Jetting is powerful, and that means it is used with judgment. A pipe that is structurally sound gets the full benefit; a pipe that is already cracked, badly corroded or collapsed needs a camera look first, because the right answer there may be repair rather than force. We camera a questionable line before jetting it, so the high pressure is cleaning a pipe that can take it, not finishing off one that was failing. Done that way, jetting is the most thorough clearing there is and sets up any repair that follows with clean walls to work on.
